Dovga (herbs & yogurt soup)

Ingredients:
8 cups thick plain yogurt, beaten until smooth
4 quart water
2 cups white rice
1 egg, beaten
1 teaspoon salt
1 tablespoon flour, dissolved in warm water
4-5 bunches fresh cilantro, fennel, parsley or any other herbs, chopped and mixed
1 can chickpeas

Cooking:
Mix yogurt and water together and pour it into a deep pot. Place the pot on the stove and bring the liquid to a boil, stirring constantly. Then switch it to the low heat and continue stirring without stopping. Add one beaten egg, rice, salt and flour, and simmer it until the rice is cooked. It’s very important to stir the soup constantly. In the end, add chopped fresh herbs and chickpeas. Some people prefer to serve it chilled, but I personally like it hot. It’s a very delicious and light appetizer that will work in any kind of weather. Serve it in glasses as a drink. Enjoy!
